1 Cup of brown sugar

1 cup of water

Half Cup of Raisins

Stick of Cinnamon

Your favourite dark rum – we like to use Mount Gay Rum

Orange peel & a few raisins to garnish

To Make the Raisin Syrup

Combine the water, brown sugar, raisins and cinnamon in a pot & bring to the boil, simmer & reduce until a syrup consistency is created.

Strain the raisins from the syrup.

To Make the Cocktail

Build the cocktail by pouring 45ml of Rum , 15ml of syrup & a dash of bitters over ice into a glass.

Stir to combine.

Garnish with raisins & a peel of orange

Top Tip

Store the syrup in a left over glass jar in the fridge and have it ready for the next time (being this delicious we won’t blame you if it doesn’t last very long)
